Cannabis-Infused Pumpkin Spice Muffins

Makes 12 standard muffins or approximately 36 mini muffins

20 min prep time – 25 min bake time

Ingredients

  • 1 cup of white flour
  • 1 cup of oats
  • 3/4 cup of coconut sugar
  • 1/4 tsp of salt
  • 3 tsp of Baking powder
  • 1 tsp of Baking soda
  • 2 tsp of Pumpkin pie spice
  • 1/2 tsp if cinnamon
  • 3/4 cup of pumpkin seeds
  • 1/2  cup of pumpkin puree
  • 3/4 cup of milk
  • 1 egg
  • 5 tbs of cannabis infused coconut oil (melted)

Topping ingredients

  • 1/2 cup oats
  • 3 tbs of pumpkin seeds
  • 3 tbs of brown sugar
  • 2 tbs of melted butter
  • 1/4 tsp of pumpkin pie spice
  • 1/8 tsp of cinnamon

Items you will need

  • 2 large mixing bowls
  • 1 medium mixing bowl
  • Hand mixer
  • Spatula
  • Measuring cups and spoons
  • Muffins scoop
  • Cooking spray
  • Muffin tin standard or mini
  • Oven

Method

Part 1

Preheat the oven to 385 degree Ferenheit

In a medium sized bowl, add all the ingredients listed for the topping, mix well and set aside. You will add this to the top of each muffin before baking them.

Part 2

In a large mixing bowl, add the flour, oats, coconut sugar, baking powder, baking soda, pumpkin pie spice, cinnamon, salt and pumpkin seeds. Mix them together using the spatula and set aside this dry mixture. 

In a separate large mixing bowl, add  the pumpkin pure, milk, egg and oil. Use the hand mixer to mix these wet ingredients together.

Take the bowl with the dry ingredients you set aside early and add the dry mixture to the bowl with the wet mixture. Using a spatula gently fold the two mixtures together until combined. Do not over mix.

Part 3

Spray the muffin tin with cooking spray or you can use muffin liners. Use the muffin scoop to scoop the mixture from the bowl to the muffin tins, filling them evenly.

Take the bowl with the topping mixture you set aside in part 1. Using a small spatula or spoon, place a spoonful of topping over each muffin. Pat the topping down a bit on the muffins so it sticks properly. 

Place in the preheated oven and bake for approximately 25 minutes for standard muffins and approximately 10-12 for mini muffins. When you remove them from the oven you can make sure they are done by inserting a toothpick in the center. If it comes out clean that means the muffin is baked well. 

Let the muffins cool a bit before removing them from the muffin tray. Place them on a cooling rack.

Store your muffins in the fridge or freezer to keep longer.

Remember to always start slowly when consuming cannabis edibles, wait an hour or two to see how it affects you and go from there.
